Laura is sharing a favorite recipe with us today! Even though, they’re called Christmas Peppermint Patties, I’m pretty sure they’d taste good any time of the year!

Christmas Peppermint Patties

3 ¾ cups powdered sugar

3 T butter (not oleo) softened

2 or 3 t. peppermint extract

½ t vanilla

¼ c. evaporated milk

2 c. semisweet chocolate chips

2 T. shortening

 

Combine first four ingredients, add milk and mix well. Roll into 1-inch balls and place on waxed paper-lined cookie sheet.  Chill for about 20 minutes. Flatten with a glass to 1/4 –inch thick; chill for 30 minutes. Melt chocolate chips and shortening. Dip patties; place on waxed paper to harden. Yield: About 5 dozen.

I’m thrilled (and a little sad) to announce the release of the third and final book in my Sisters by Choice series—REDEMPTION on September 18.  Well, probably last. I do have an idea for a fourth and final book rattling around in my brain, but it’s only an idea at the moment. Who knows if it will grow into a book?

Anyway…back to REDEMPTION.

Dictionary.com defines redemption as an act of atoning for a fault or a mistake; deliverance or rescue; deliverance from sin; salvation; atonement for guilt.

Wow! As I look at those definitions, I realize REDEMPTION is full of all sorts of redemption. No wonder that’s the title I chose.

The story begins with Patti not understanding why her twin, Jamie, continues to place herself in serious jeopardy time and time again. Jamie doesn’t understand either. Only that she needs to help others if and when she can no matter the danger to herself.

As the writer I know why, and I’ll share the secret with you. And don’t worry—I’m not spilling any secrets that will ruin the book for you!

Jamie is ashamed of things she’s done in her past. As a result she feels God can’t love her the way she is. So she seeks redemption by putting herself in dangerous situations to help other people.

But the redemption part of the story doesn’t stop there. Enrique, the tall, dark, and handsome FBI agent seeks redemption as well. From Jamie.

Then there’s the bartender Jamie meets on her quest to find a friend’s missing child. He’s trying to overcome a lifetime of criminal acts. More redemption.

And then there’s the father of the kidnapped child—who is the kidnapper! Talk about needing redemption.

Like I said, no wonder this book is named REDEMPTION.

Writing Tip Wednesday: EXPLOSIVE ENDINGS

It’s been a few weeks since I posted writing tips so just as a reminder, I’ve been talking about my sure-fire way to publication: best beginnings + marvelous middles + explosive endings = PUBLICATION! We’ve gone over the first two and today we tackle explosive endings.

One of the keys to creating an explosive ending is to resolve all the story plots, not only the major one. Readers have invested time and emotion in your story. Don’t cheat them by not giving them the resolution they want. It’s not fair to leave them hanging and wondering.  If it’s a series, it’s fine to give a hint to an upcoming story but it’s still important to finish the current story.

For example in my Sisters By Choice series, in BETRAYED there was a main character whose son was kidnapped by his father but it had nothing to do with the story plot. It was simply a fact of the character’s life. But at the end of the story readers just know that Jamie can’t resist helping her new friend.  And that becomes the basis for my about to be released book, REDEMPTION.

In a Christian romantic suspense, there are usually three main areas that need an ending along with any subplots. First we have the suspense plot, then the romantic thread, and finally the spiritual arc.

A famous quote from Mickey Spillane says it all. The first chapter sells the book. The last chapter sells the next book.

Your ending will either give you a satisfied reader who will want to buy your next book and recommend it to others or one who won’t read another book you write—ever. The choice is yours.

Many books actually have two endings—mine usually do. Often the crucial resolution scene (stopping the murderer—rescuing the damsel in distress) happens in the next to the last chapter and the final chapter is used to tie up all the other story lines in a happy little bow. Nothing wrong with that. It’s a good plan.

just for fun!!

Fridays are usually for my friends but I hate to get in a rut so… today is just for fun. In July, DEADLY COMMUNICATIONS was released. It features a speech pathologist who gets a little too involved with her clients! Anyway…I’ve been writing for 19 years and Deadly Communications was my first effort of blending my real life job with my writing.

Why is that?

Because I know just how boring being a speech pathologist can be. Now don’t get me wrong, I loved my job and I miss it– a lot! But the reality of the job is it can be a bit repetitious to say the least. I’ve listened to more Ss and Rs than you can even imagine.

So it was hard for me to imagine a story with a speech pathologist that could be exciting and interesting to readers. Sure I found it super exciting when I heard a child say “Sally sells seashells by the seashore.” perfectly–but that’s me.

Anyway, one day the story popped into my head. I now have 3 Deadly Communications mysteries written. The second will be released sometime next year.  So this was a long way of getting to my point.

There are jobs that lend themselves to suspense and mystery stories, such as police officers, private investigators, even reporters. But a speech pathologist? The thing is I’m not a police officer, a private investigator or a reporter. But I’m none of those things so when I use those characters I have to go light on the job aspect but I didn’t have to do that with DEADLY COMMUNICATIONS.

I was able to write my therapy scenses with complete confidence that it was realistic.

Apples of Gold

Proverbs 25:11

A word fitly spoken is like apples of gold in settings of silver.

 

Apples of gold in a silver setting? Doesn’t that create a beautiful word picture? Golden apples in a silver bowl–sounds lovely to me. And that’s what the Bible likens our words to if they are fitly spoken.

So what exactly are fitly spoken words? 

I’m sure everyone has a different defintion of that that phrase might mean. To me it’s about speaking kindly to others. Sometimes we may in a position of having to say something that may be unpleasant to another person. But we can always do it with kindness. 

And sometimes the kindest words are the words not spoken. We don’t always have to say everything on our mind in every situation with every person. 

Words fitly spoen are those that we speak after examining ourselves, our motives, and  our attitudes. If the words pass all those tests, then speak them, but speak them in the kindest, most loving way you can.

The world is filled with angry, hars, hurtful, critical, and  hateful words. We don’t have to add to that. As Christians, let’s create apples of gold in silver settings.

My Friday Friend–GAIL PALOTTA

Un-wrinkle without Ironing

 

Hmm. Something about me for my friend, Lillian.

I like good books, long walks on the beach, swimming, visiting with friends and family and wrinkle-free clothing. I’ll share the ways I deal with clothes that wrinkle. These tips are more helpful than inspirational, but they’ve allowed me extra time for things that are.

When I reached the age of ten, I started doing the family ironing. That makes an iron an antique, or at least an outdated tool. I’ve seen the steamers, and most of them look like aliens from other planets to me, so I’ve never bought one.

Over the years I’ve figured out other ways to avoid ironing in case an article of clothing that needs it accidentally ends up in my house. I realize some people like the task. One lady told me she likes ironing and does it to relax. I can think of better ways to unwind, but I go along with personal preference, realizing we’re all different. In case there may be others who think of the chore as slaving over an ironing board, and would prefer not to do it, I’ll share my secrets.

Sometimes it works to put the wrinkled article of clothing in the dryer and let it toss around a few times. It shakes out the creases. If it’s made from a fabric that absolutely can’t be put in the dryer, as soon as it comes out of the washing machine, stretch the material as far as possible without tearing it. First pull tightly on the torso or middle of the garment then the sleeves or legs. Afterward hang it up or lay it flat to dry. This technique works well, or I’m fooling myself, in which case my family and I are walking around unkempt.

Lastly, if possible only purchase wrinkle-free or wrinkle-resistant clothes. Many garments now are polyester or have the synthetic material added. I still remember the day I heard about the cloth, new at the time. I grew excited and wanted to throw away the iron. My mother insisted on a trial period for polyester attire. Then alas, she didn’t like the little balls that rolled up on it. Most Southerners scorned the new fabric, not only for the pills, but it also had an impact on the cotton raised here. Judging from the shirts, dresses, shorts and pants in the stores, I’d say today the two fabrics have made their peace. There’s nothing better than cotton with polyester added to keep it from wrinkling. Polyester garments are soft now too, and those producing it have done away with the pills.

I haven’t added up the hours I’ve saved not ironing, but I know it’s given me more time to take long walks on the beach, swim and visit with family and friends. That’s when I can sit back, take a deep breath and enjoy God’s blessings.

Sometimes You Get What You Ask For

 

When I was about five-years-old, I heard someone talking about a “meat and potatoes” man. My mom explained it meant that this man was a plain eater. He liked meat and potatoes meals — nothing fancy.

At five, I didn’t like fancy meals either. “I want a husband like that!”

She frowned at me and shook her head. “Be careful what you wish for.”

“Why?”

“Because you might get it.”

My mother was a wise woman. I did marry a plain eater. My husband loves any kind of meat, as long as it’s unembellished. Gravy is okay but no tomato sauce of any kind. There aren’t many fruits and vegetables in his diet so my cooking choices are limited.

He doesn’t eat lasagna or any Italian foods. I have a wonderful lasagna recipe that I haven’t made for seven years. I’m going to forget how to prepare it! So before I do, I plan to invite a few family members over and make it for them. Thankfully my husband will be happy with a hamburger. He can grill it while I slave over the hot stove for everyone else!

I got what I asked for, and it’s been a challenge to cook supper over the years. You see, he’s happy to eat the same few foods every week. I get tired of it and need more variety. Most new recipes that I try must be modified. I leave out a couple of ingredients or substitute for something else he will eat.

I guess it’s made me a creative cook. I do receive a lot of compliments. And he’s learned to trust me over the years. If I make a new recipe that contains something he doesn’t normally eat, I tell him. I also let him know I think he will like it. Usually he does. In this way, I’ve added several new menu items to his diet, giving me more choices at supper.

If you have a picky eater at home, you understand my dilemma. And when you get tired of preparing the same old recipes, at least there are plenty of restaurants close by!

 

I asked Sandra to share her lasagna recipe and she did! Not only did she share it, but she tried it out and said her guests loved it! I’ll bed they did. I love anything Italian, but lasagna is one of my favorites!

 

Make a day ahead Lasagna

Ingredients

1 1/2 pounds ground beef                         3 cups (24 oz) ricotta cheese

3/4 cup chopped onion                              1/2 cup grated Parmesan cheese

1 clove garlic, minced                                 1 tablespoon parsley flakes

2 15 oz cans of diced tomatoes                  1 1/2 teaspoons salt

2 15 oz cans of tomato sauce                      1 teaspoon oregano leaves

2 tablespoons parsley flakes                      16 oz lasagna noodles , uncooked

2 tablespoons sugar                                    1 pound mozzarella cheese, shredded

1 teaspoon salt                                              1/2 pound provolone cheese

1 teaspoon basil leaves                               1/2 cup Parmesan cheese

 

Crumble the ground beef into a large saucepan or Dutch oven along with the onion and garlic. Cook over medium heat until meat is brown and the onion is tender. Drain well.

Add tomatoes to the meat mixture in the pan. Stir in tomato sauce, the sugar, 2 tablespoons parsley flakes, 1 teaspoon of salt, and the basil. Heat to boiling on a medium high heat, stirring occasionally. Reduce heat and simmer uncovered one hour or until the mixture is the consistency of spaghetti sauce. This creates a meaty spaghetti sauce. Reserve 2 cups of this sauce for the top layer.

Mix the ricotta cheese (can use cottage cheese as a cheaper option if you prefer,) 1/2 cup Parmesan cheese, 1 tablespoon parsley flakes, 1 1/2 teaspoon salt, and the oregano.

In an ungreased 13×9 deep baking pan, layer 1/3 each of uncooked lasagna noodles (as long as the noodles are completely covered they will soften naturally in the layered mixture overnight in the fridge,) meat sauce, mozzarella cheese and all the ricotta cheese mixture. For the second layer, use 1/3 of the uncooked lasagna noodles, meat sauce, and provolone cheese.  Use another layer of noodles on top of the provolone cheese and spread the reserved meat sauce to completely cover them, followed by mozzarella cheese. Sprinkle with 1/2 cup Parmesan cheese.

Cover it and refrigerate overnight. Make this recipe the night before because it requires time for the uncooked lasagna noodles to soften. (If you are making it to eat on the same day, simply cook the noodles following directions on the box before combining the layers and reduce the baking time to 45 minutes. I like the convenience of doing it the night before because there’s no mess in the kitchen when the guests arrive. And the stress of preparation is behind me!)

When you’re ready to bake, remove it from the fridge an hour early. Heat the oven to 350 degrees. Bake uncovered for about an hour.

Let the lasagna sit about 15 minutes before cutting for easier slicing. Makes 12 3-inch square servings.

Marvelous Middles!

Just as a little reminder, in an earlier post I gave you my formula for writing a publishable book. BEST BEGINNINGS + MARVELOUS MIDDLES + EXPLOSIVE ENDINGS = BOOK CONTRACT. Today we’re going to talk about those marvelous middles.

Avoiding the sagging middle syndrome is crucial if you want to write an excellent book. So what exactly is the sagging middle syndrome? It’s that part in the story when you’re searching for something to write before you get to that great ending you’ve planned. It’s also the point where people start skimming your story instead of reading it.

And that’s not a good thing!

We want to keep our readers completely engaged in the story. But how? The key to marvelous middles is to keep the tension high, make the reader want to know what happens next.  Here’s a few ways to ensure MARVELOUS MIDDLES:

  1. Introduce a new character. If they have a secret—even better!
  2. Blow something up (or have another murder).
  3. Add a ticking time bomb to the original problem.
  4. Add a red herring, give the reader several choices for the murderer. That will keep them guessing, and that means they want to know what happens next!
  5. Avoid all that back story you are dying to write. No matter how much you love it—it doesn’t move the story forward.

Here’s the key to writing marvelous middles, if you’re feeling bored or that the story is in that ho-hum stage, then do something to shock yourself and the reader. Keep doing that, and you will certainly avoid that sagging middle syndrome!

Whew! Now you’ve got your best beginning and a marvelous middle, so next time will look at  EXPLOSIVE ENDING that will wow that editor and have them clamoring for your manuscript.

My Great Adventure

Have you ever done something big and then wonder what took you so long to actually do it? For me it was my decision to go to Disney World last December. I had wanted to go there since I was a little girl, but had never followed through with that dream until last year.

We planned the trip in August and my debut Novel, The Christmas Promise was set to release in November. God knew what He was doing when he prompted me to ask my husband about the idea, because I have never needed a vacation as desperately as I needed that one. I was stressed to my limit, and my health was paying the price.

With the help of my family and the understanding of my fantastic teenage boys, my hubby and I took off for “the happiest place on earth.” Three days into the trip I observed to my husband that I was no longer having chest pains and I found myself relaxing for the first time in months.

I think my favorite part of the Magic Kingdom was Epcot. I loved the food and seeing all the countries. If I ever get to go there again, I’m planning to eat all my meals there.

My husband especially enjoyed Animal Kingdom. His favorite activity was the safari. If you ever get there it’s a must do attraction.

I’m a West Coast girl, and grew up going to Disneyland more times than I can remember, so the Magic Kingdom was only so-so for me. There were differences I couldn’t look past. Although that castle—wow!
